WHere is a simplified interpretation of a beverage found on a new cocktail list. It's a party-sized prepared mix which is packed with the flavours of the festive period, making it perfect for your festive gathering. Save the extra citrus syrup you can use for brunch beverages, desserts, or for another batch of bikinis.
The Bikini Cocktail
Yields 10 servings
Ingredients for the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Drink (yields 850ml, serving 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Directions
For the Cordial: Put the listed items into a pan, heat until it reaches a gentle boil, agitating to dissolve. Then, remove from the stove and let it to reach room temperature completely. Decant into a sealable bottle, close it keeping it in the fridge, it will last for up to one month.
To make Premix: Mix all the liquid ingredients in a sizeable container, allow it to infuse for an hour, then strain preferably using cheesecloth, so it's completely strained.
When ready to serve: Measure 85ml of the batch mix into your mixing glass containing ice, gently stirring carefully for about 60 seconds to cool it down. Strain into an chilled martini glass or similar, top with the cranberries and complete it by giving it a brief mist with the mandarin essence over the top.
